Recipe: homemade pizza

Hi there! Today I will share with you a really easy and fun recipe. Pizza is of course not known for being healthy, but making it yourself is actually healthier and a lot more fun! You can pretty much make the pizza the way you like it, with toppings of your own choice. I will share with you how I made it, but it is up to you to change it.

What you will need (1 portion):

  • 2 slices of puffed pastry
  • 2 slices of gammon
  • 4 aspergus
  • 10 black olives
  • a handful of pizzacheese 
  • italian species
Optionally, you can make the tomatosauce yourself, like I did, for this you will need:
  • 7 small tomatoes
  • a handful of rocket lettuce
  • salt and pepper
Preparation:
  1. For the sauce, put the tomatoes, rocket lettuce and some salt and pepper in a blender and blend until you have a sauce
  2. Preheat the oven to 200 degrees Celsius
  3. Place the puffed pastry next to each other and spread with the tomatosauce
  4. Add the gammon, aspergus and black olives
  5. Finish with a handful of pizzacheese and some italian seasoning
  6. Put in the oven for about 20 minutes
  7. Ready to serve!

Recipe: tagliatelle with pesto-salmonsauce and oventomatoes

I love how with a season dissapearing a new season comes delivering new colours, new weather and new food. I enjoy cooking with ingredients that are typical for a season because you are sure they are fresh and they just give that little extra spark to that dish. This time of the year, with its cold mornings and warm afternoons I love making pasta. The great thing about pasta is that it is such a wide range of different recipes that you can experiment with. You can make a very light pasta but also a pastabomb full of flavours.

My brother and I were home-alone yesterday and we decided to go with some easy pasta with a nice pesto-salmonsauce. Paired with this we decided to go for oventomatoes because with the right ingredients the flavours marry together really well. All really easy to prepare and absolutely wonderful for your tastebuds!

What you will need (2 portions):

  • 250 grams of tagliatelle
  • a cup of sour cream
  • 2 tbsp of green pesto
  • 5 sun-dried tomatoes
  • 15 cherrytomatoes
  • balsamico vinegar
  • italian spices
  • basil
  • 100 grams of smoked salmon
Preparation:
  1. Cook the tagliatelle following the instructions on the wrapper
  2. Meanwhile, pre-heat the oven on 190 degrees celsius
  3. Put the cherrytomatoes in a bowl and add a splash of balsamico vinegar
  4. Add some italian spices and some basil to the bowl and put in the oven for 20 minutes
  5. Cut the sun-dried tomatoes into small piece as well as the salmon
  6. Put the sour cream, sun-dried tomatoes and pesto into a pan and stir until the flavours have all maried together
  7. Optionally, add some pepper to the sauce
  8. Place the salmon onto the plates and add the tagliatelle
  9. Put the sauce on top of the tagliatelle and finish with some oventomatoes
  10. Ready to serve!

What's going on?

Hello there. It has been a little while as you can guess. So what's going on? Holiday's over, which means the 'normal' life begins again. With this, I mean school, training, after-school activities, jobs, etc. So as you can probably understand, I haven't had a lot of time to do some blogging. Because that is what it is about: time. For a moment, think about something that you really want. Then, think about something that you really want to avoid. Both of these things, probably involve time. Isn't it weird how our whole world revolves around 2 things: money and time (okay and maybe also the sun). So, back to where this is all about.

This is my second week at school and we are already bombed with assignments and homework. Luckily, with some planning I can manage it all just fine. Quite some things changed this year because everyone follows different classes and all the schedules are switched around. However, I love meeting new people and following my own path.

With school starting again, my hockeyseason started again as well, and what a start! We already did three matches just to get into the rhythm again and we won all three of them :) Now, I've got training two times a week and one match in the weekends. Being so busy with school and hockey, I'm letting the running rest for a little, since I don't want any injuries. This means running while be taken down a notch.

Furthermore, I have found some great recipes that I tried or still have to try, so I will definitely be updating some of those very soon! That's it for now, I will have to continue my homework haha!

Recipe: Fish en papillote

My mom and I decided to try out a totally different recipe. A little diverse than what we normally make, but definitely worth trying. This fishpackage is awesome for when you simply want to make something else. This dish is full of flavours and a little party for your tastebuds!

What you will need (4 portions):
  • 4 cod fillets
  • 150 grams of spinach
  • 4 cloves of garlic
  • 100 grams of small tomatoes
  • 1 red onion
  • 1 lemon
  • 4 branches of rosemary
  • 4 branches of thyme
  • Peper and salt
  • Olive oil
  • 4 pieces of silver foil/bakingpaper
Preparation:
  1. Heat the oven on 200 degrees Celsius
  2. Wash the spinach and place some on the different pieces of foil
  3. Season the cod fillets with peper, salt and chilipowder and place them on the bed of spinach
  4. Slice the red onion into rings and add those to the packages together with the tomatoes
  5. Press the cloves of garlic and put this into the packages together with a branch of rosemary and thyme
  6. Cut the lemon and place one slice on each of the fish
  7. Sprinkle the packages with olive oil and close the packages
  8. Steam them in the oven for about 15-20 minutes
  9. Perfectly to be served with spinachrice and a lovely fish sauce

Do you know what it feels like to keep going?

Wow. Seriously, wow. What an amazing run I had today. Yes, amazing it was. I decided to take the same route as wednesday, to see if I could beat the time. I have been struggling with a knee injury for two years now, and it keeps coming back, just like during my wednesday run. Fortunately, my knees weren't bothering me today at all. Aside from a stomachache it was going as planned. I beat wednesday's time with a total of three minutes.

Every little improvement makes me so motivated to train more and more. During the run I faced a stomachache due to which I wasn't motivated to keep running. Then I remembered something I saw on the internet today:
This may seem a little exaggerated, but it is the general idea that really speaks to me. While remembering this quote, I figured every little bit of progress is progress. You just got up to do workout. Dressed up to get fit. Tied your shoe laces to become in better health. Why would you quit now? You may know what giving up feels like, but do you know what keep going feels like? Appreciate all the little steps of progress you make during the way to your goal. In the end, it is the journey that got you there.

For if you were wondering, yes, I got up, went running, maybe faster than ever. I had wings, I was flying. Figuratively speaking. Here is a picture of what I encountered in the forest. It had been storming and raining a lot overnight and this is the result:
